This was an odd one as there are two films where he is in the credits but I'm sure he's not in the film. Could there be two Gary Carter's at the same time? it is a common name. Or maybe they just liked the name so used it to fill out the English name credits? --- Then there's also Amour Of God, where most of the Gwailo cast are not credited on the film, but on the HKMDB and IMDB he is credited as "Bearded monk", yet I couldn't see him at all, even the among the monks with beards.
